Recipe: sundried tomatoes & crimini mushrooms – nommy!

Quick and easy is my mantra during the work week.  The other night I stopped into Urban Fare on my way home and picked up a few delicious ingredients to incorporate into my meal – a jar of sundried tomatoes, crimini mushrooms, cream and fresh basil.

I took a favourite recipe of mine from Bon Appetit – chicken in sundried tomato cream sauce – and added a few twists to it.  I began by draining the oil from the sundried tomatoes and reserving it for my saute pan.  Next I sliced up crimini mushrooms and cooked some broccoli.  Once the oil had headed in the saute pan, I added a couple of cloves of minced garlic and the sliced crimini mushrooms, sauteing until tender.  To this I added sliced chicken breasts and a healthy dose of crushed red peppers for a bit of heat. Healthy dose translates into how much heat I was in the mood for that night.  Next I added the broccoli, sundried tomatoes and fresh basil, followed by approximately 1/4 cup of heavy cream.  Once the mixture had simmered sufficiently to cook the chicken and allow the flavours to melt together, it was ready to eat – nommy!
